Lime & ginger roasted veg + tempeh
Lime + ginger = delicious dynamic-duo flavour enhancer! Both of these oils have become favourite go-to oils for me in the kitchen. Not only do they both hold up when compared flavour-wise with fresh lime and ginger, but they save much time, faffing, mess and cost! (if you’ve tried to buy lime in NZ – and, yes, I’ve tried to be more meditative as I peel and shred the ginger with the end goal in mind, but...)
These simple and healthy roast veg are great for lunch or dinner (or heck, breakfast.) Get your V+P (veg + protein) with the tempeh - to give your body the fuel it needs to manufacture your building blocks: amino acids. The veg are loaded with nutrient goodness, tempeh is fermented so it’s good for your gut and microbiome, and the oils add delicious flavour AND health benefits (ginger aids digestion, and lime’s high limonene content is very cleansing internally.)
Method
heat the oven to 220 C and drizzle some cooking oil into a large oven dish.
Throw the vegetables and garlic into your oven dish, drizzle the sweet chilli sauce and tamari over the veggies, then drip 2-3 drops each of the lime and ginger essential oils, and and stir a little to mix. Life-changing-trick: just cut an entire bulb (or two! You crazy garlic-loving thing!) in half and add to the veg. After the veg have cooked, put on your kitchen rubber gloves (as the garlic will be piping hot) and squeeze the cooked cloves from the bulbs. Voila).
Place the tray in the oven for 25-30minutes or until cooked. I like the cover my tray with a flat baking tray (zero waste) for the first 15minutes or so, to tenderise without drying out. Then uncover for the final 10-15min to lightly crispify the outside.
Serve however you prefer! Over some spinach leaves, over rice or as a side dish. Enjoy!
Ingredients
2-3 cups of your favourite veg cut into bite-sized pieces (cauli, brocolli, kumara, beetroot, pumpkin, red cabbage - follow your heart, and stomach!
250gm tempeh sliced approx. 1cm thick
As many garlic cloves as you can be bothered peeling
3 drops lime essential oil
2 drops ginger essential oil
splash each of sweet chilli sauce and tamari / soy sauce
