Bang bang cauliflower with satay lime tahini sauce
After forming an expensive addiction to my local cafe’s bang-bang cauliflower, I needed to take the power back, and recreated this delectable, and essentially guilt-free* bar snack at home. Try it, you’ll never look back and everyone will ask you for the recipe. Nutritious, satiating, with an uber flavoursome sauce that goes with anything.
* the words guilt and cauliflower can’t possibly go in the same sentence!
The Cauliflower
1 large (or 2 small to med) heads of cauliflower
1/2 cup flour (wheat or wholemeal or rice, they’ll all work)
1/2 cup water
Method
Heat oven to 230 C and grease your baking tray (baking paper and oil work)
In a bowl, mix the flour and water to a smooth batter.
Chop the cauliflower into bite-sized ‘trees’ or chunks, and toss them through the batter to lightly coat each piece. Spread onto your baking tray and bake for 15-20min, checking atleast once to flip and ensure they’re cooked evenly.
Method
Very simple: mix all ingredients! Works best if you first blend the peanut butter, tahini and warm water together first, then add the remaining ingredients. Sauce - tick.
Satay lime tahini sauce
2-3 drops lime essential oil
2 drops ginger essential oil
1/4 cup peanut butter
1/4 cup unhulled tahini
1 tspn tamari
1-2 tspn maple syrup
dollop sweet chilli sauce
1/4 cup warm water
2 Tbsn rice vinegar
